Chicken on a wooden plate with lemon garnish

Cajun Chicken

  • 1 - 5 to 6 lbs whole chicken
  • Sandhill Ben's Garlic Seasoning
  • Olive oil

Preheat the oven to 425° F.

Remove the giblets from the chicken and rinse inside and out. Pat the chick dry and sprinkle generously with Sandhill Ben’s Garlic Seasoning, feel free to put some seasoning inside also. Brush the outside of the chicken with the olive oil. Place chicken on a baking dish breast down. Place chicken in the oven, cook for 60 minutes.

Check to see if chicken is done, if you are using a meat thermometer it should read 165° F. Or gently slice the skin between leg and the breast and if the meat juice is clear it is also done. Let the chicken rest 10 minutes before cutting.

Optional: Add mixed vegetables about half way through cooking.  Good vegetables to use are: Potatoes, onion, carrots, peppers, etc.
