Roasted Brussels Sprouts with Sandhill Ben's Garlic Seasoning

Brussels sprouts have quietly become one of the most talked-about vegetables on the dinner table. And once you try them roasted with the right seasoning, you'll understand exactly why.

The Brussels Sprouts Comeback

For a long time, Brussels sprouts had a bad reputation. Overcooked, bland, and mushy — that's how most people remember them from childhood. But something has changed in recent years. More and more home cooks are discovering that when you roast Brussels sprouts at high heat with a little oil and the right seasoning, they transform into something almost unrecognizable — crispy on the outside, tender on the inside, and full of deep, savory flavor.

If you've never been a Brussels sprouts fan, this recipe might just change your mind. And if you already love them, Sandhill Ben's Garlic Gourmet Seasoning is about to take them to a whole new level.

Why Roasting Makes All the Difference

The secret to great Brussels sprouts isn't the vegetable — it's the method. Roasting at high heat does two things that boiling or steaming never can:

  • It caramelizes the natural sugars in the sprout, creating golden, slightly crispy edges with a hint of sweetness
  • It concentrates the flavor rather than washing it away in water

Add Sandhill Ben's Garlic Gourmet Seasoning into the mix and you have a side dish that holds its own next to any main course.

Roasted Brussels Sprouts Recipe

Prep time: 10 minutes Cook time: 20 minutes Serves: 4

Ingredients

  • 1 lb. Brussels sprouts
  • Olive oil
  • Sandhill Ben's Garlic Gourmet Seasoning, to taste

Instructions

Oven method:

  1. Preheat oven to 450°F.
  2. Wash Brussels sprouts in cold water. Remove the stem and any outer leaves with spots or blemishes. Cut any large sprouts in half so all pieces are roughly bite-sized.
  3. Drizzle a light coating of olive oil over the sprouts and toss until evenly coated.
  4. Sprinkle Sandhill Ben's Garlic Gourmet Seasoning over the sprouts and toss again.
  5. Spread in a single layer on a baking sheet and roast for 20 minutes until golden and crispy on the edges.

Broiler method (for extra crispy sprouts):

  1. Follow prep steps above.
  2. Place the oven shelf on the 2nd rack from the top.
  3. Broil with the oven door closed for 10 minutes.
  4. Open the oven door and broil for another 10 minutes.
  5. Serve immediately and enjoy!

Tips & Serving Suggestions

  • Don't overcrowd the pan — sprouts need space to roast, not steam. Use two pans if needed
  • Cut side down — place the flat cut side of each sprout face down on the pan for the best caramelization
  • Season to taste — start with a light sprinkle and add more after tossing if you want a bolder flavor
  • Great alongside grilled steak, roasted chicken, or pork tenderloin
  • Try adding a squeeze of fresh lemon juice right before serving for a bright finishing touch

A Seasoning Built for More Than Meat

Sandhill Ben's Garlic Gourmet Seasoning was crafted as a dry rub for beef, pork, and chicken — and it's exceptional in that role. But as our Secret Baked Potato Wedge recipe proved, this blend works magic on vegetables too. The bold garlic flavor and perfectly balanced seasoning bring out the best in Brussels sprouts in a way that plain garlic salt or pepper simply can't match.
